Nightingale was born in the food-centric city of Richmond, VA & grew out of a love for bringing great tastes to the community. Influenced by the ever-creative chefs, artists, musicians & culture creators in our city, Nightingale is built on the idea of making something you’re proud of and sharing it with the ones around you.
Founder & Veteran, Hannah Pollack, & her husband, Xavier Meers, both professional chefs, met in the kitchen & bonded over their love for spreading joy through food. During a 5 year restaurant run together, Hannah created the first Nightingale ice cream sandwich as a menu dessert option. Gaining almost instant popularity, Hannah & Xavier were soon filling ice cream sandwich orders for markets, restaurants and events all over town. Shortly thereafter, they left the restaurant kitchen behind to fully embark on their new venture—one born from a love of their culinary crafts, classic desserts & each other.
Handcrafted in small batches, Nightingale ice cream sandwiches are made with a 14% butterfat ice cream, fresh baked cookies & homemade inclusions. Unique & gourmet in nature, they cannot be compared to any other ice cream novelty, evoking tastes of childhood with new-age sophistication.
